Hola Familia!
Este post no puede ser más oportuno, toda España e incluso me atrevo a decir todo el mundo ha estado pendiente de la capital lusa por la final de la Champion Leage. Indios y Vikingos se jugaban añadir a sus vitrinas una ansiada copa, en el caso de los Atléticos, la primera, y en el de los Madridistas la famosa y aparentemente maldita ( por lo que se ha hecho de rogar) Décima.
Como podéis ver, en casa teníamos el corazón dividido. Todo sobre la capital lusa y su famoso bacalao a continuación!
Lisboa es una ciudad especial, con un encanto único, una ciudad que una vez se llenó de gloria por ser uno de los puertos más importantes de mundo, tierra de descubridores...y que a su vez fué prácticamente enterrada en vida por un gran terremoto en 1755 que incluso provocó que el río Tajo inundara parte de la ciudad. Esas luces y sombras, ese canto a la añoranza, ese Fado son las que hacen a Lisboa un lugar que no podemos dejar de visitar.
Tengo que confesarlo soy una enamorada de la ciudad y de su gastronomía, sobre todo del Bacalao ( incluso por encima de sus deliciosos pastelitos de nata), cuanta la leyenda que los portugueses tienen 365 recetas para preparar Bacalao, una para cada día del año.

El Bacalao
El Bacalao es un pescado blanco o también llamado magro, por su poco cantidad de grasa ( <5 % de materia grasa). Esa poca cantidad de grasa también hace que sea pobre en vitaminas A,D, E..todas las liposolubles...pero tienen gran cantidad de yodo, fósforo, potasio...
Contiene alrededor de un 18-20% de proteínas de su composición nutricional y tiene muy poca cantidad de tejido conjuntivo a diferencia de las carnes lo que le hace ser mucho más digestivos, como el resto de pescados.

Those lights and shadows, the song of longing, Fado that are what make Lisbon a place you can not miss.
I have to confess I am a lover of the city and its cuisine, particularly cod (even above their delicious custard pies. The legend say that the Portuguese have 365 recipes for cod, one for each day of the year.
Cod is a white fish, also known as lean, with little fat (<5% fat). That little fat also makes it poor in vitamins A, D, E... but all have lots of iodine, phosphorus, potassium ...
It contains about 18-20% protein in their nutritional composition and has very little connective tissue unlike meat which makes him much more digestible, like other fish.
