La leyenda del Té/ The Tea legend

Estos últimos días hemos estado adentrándonos en la gastronomía y la cultura culinaria de Marruecos, en ella destacábamos la indiscutible presencia del  en sus vidas. pero..¿ El es té de origen magrebí? ¿cuál fue su origen?



        El Té ya era conocido en China desde el año 2737 a.C.

"Cuenta la leyenda que en China el Emperador Sheng-Tung, hombre muy preocupado por la salud y bienestar de su pueblo, observó que en algunas regiones de su Imperio, sus sus súbditos morían aquejados de las epidemias mientras que en otras regiones que sólo consumían el agua de forma hervida no. Así ordenó que todo su Imperio hirviera siempre el agua antes de beberla.
Un día caminando por el bosque le entró sed, y queriendo dar ejemplo, ordenó a su camarero hervir el agua que llevaban en las cantimploras. Este, prendió lumbre con unas ramitas secas, puso la olla a fuego y mientras el agua hervía, el viento arrancó unas hojas y brotes de un arbusto cercano que cayeron a la olla levantando un aroma y dando un sabor al agua especial, dando origen al ".

     Dicho arbusto que cuenta la leyenda era "Camelia Thea", un arbusto salvaje que puede alcanzar hasta los 5 metros de altura, de hojas perennes y lanceoladas, cuyo origen parece estar en el Valle de Assam, al paso del río Brahmaputra, entre China y la India.

     Hasta el siglo XVI el  no aparece en Europa, y lo hace a mano de los Portugueses (estos  como ya vimos en el post de "La canela", se hicieron con la hegemonía del comercio de la India tras el descubrimiento de las rutas que bordeaban áfrica).

     No existen variedades de Té, dado que siempre es el mismo arbusto, pero en función del tratamiento de las hojas encontraremos : Té verdeTe Rojo y Te negro.


  • Té verde: Las hojas son simplemente secadas al sol o desecadas artificialmente. 
  • Té negro: Las hojas son fermentadas en un ambiente húmedo y caluroso.
  • Té rojo: Las hojas son semi-fermentadas.

     Dentro de estos tres grupos, el  puede estar ahumado o perfumado, dando lugar a distintos aromas y sabores. En el Té verde podemos encontrar el "Mandarín OOlon" (perfumado con jazmín), el "Earl Grey Tea" ( perfumado con bergamota")... y en el Té negro, el "Lapsang souchong" o "full smoking flavour" con ligero aroma y sabor ahumado.



     Beber  es una perfecta manera de hidratar nuestro cuerpo,además tiene poder "drenante y diurético" evitando la retención de líquidos. Sin embargo, como siempre, en el equilibrio está la virtud,no debemos abusar de su consumo al igual que del café, ya que el , tiene entre sus componentes un excitante, una base xántica llamada "teína", que puede elevar en ocasiones demasiado nuestra tensión.

     These last few days, we have been knowing about the gastronomy and the culinary culture of Morocco, we highlighted the unquestionable presence of the Tea in their lives. But... Was the Tea born in the north of Africa? What was its origin?



           Tea was already known in China since 2737 a.C.

"Legend said that in China the Emperor Sheng-Tung, man very concerned about the health and welfare of its people, noted that in some regions of the empire, his subjects died suffering from epidemics not like in other regions while consuming only boiled water. Thus ordered that all his empire always boil water before drinking. 
One day walking through the woods he went thirsty and wanting to set an example, he ordered his waiter to boil water in their canteens. The servent lit a fire with twigs, put the pan over boiling water and while the wind tore some leaves from a nearby bush fell into the pot that raising a scent and giving a special taste to the water, giving rise to tea". 

     This legendary bush was "Camelia Thea", a wild bush that can reach up to 5 meters high, and lanceolate evergreen, which origin seems to be in the Valley of Assam, in the Brahmaputra river, between China and India.

      Until the sixteenth century the tea does not appear in Europe, and was crafted from the Portuguese (such as we saw in the post "Cinnamon", were made with trade hegemony in India following the discovery of routes bordering africa).

      There are no varieties of tea, since it is always the same bush, but depending on the treatment of the leaves we can find: green tea, red tea and black tea.

  • Green Tea: The leaves are simply dried by the sun or artificially.
  • Black tea: The leaves are fermented in a hot and humid enviroment.
  • Red Tea: The leaves are semi-fermented.

    Within these three groups, the tea can be smoked or perfumed, leading to different aromas and flavors. In green tea we can find the "Mandarin OOlon" (perfumed with jasmine), the "Earl Grey Tea" (perfumed with bergamot") ... and the black tea, the" Lapsang Souchong "or "smoking full flavor" with slight smoky aroma and flavor.

                                            

      Drinking tea is a perfect way to hydrate your body, it also has a "Draining and diuretic" effect, avoiding fluid retention. However, as always, balance is the virtue, as with coffee, we should not abuse its consumption .Tea has among its components an exciting, xanthan base called "theine", which sometimes can raise too our blood pressure.

    1. cierto!! el té blanco se realiza con los brotes y las hojas mas jovenes, secas y sin fermentar. Las hojas aún no han adquirido un intenso color verde sin embargo son ricas en cafeina y teina. :-)

  3. no soy muy forofa del té pero me gustaría saber su valor nutricional y el por que de tomarlo con limón

    1. El té no aporta kilocalorías, sólo si lo mezclas con leche o azúcar se añadiran las kilocalorías de estos.


      ¿Porqué se toma con limón? No puedo darte una respuesta 100% verídca, imagino que aporta un sabor diferente, como cuando ponemos limón en los refrescos.
