CERVEZA, EL VINO Y LA CULTURA “SIN ALCOHOL”
La cerveza sin alcohol es un producto
relativamente nuevo en el mercado que satisface las necesidades adicionales de
determinados consumidores que deseaban disfrutar de una bebida refrescante como
es la cerveza sin el inconveniente de su contenido en alcohol.
En su breve historia, los fabricantes se han
adaptado con rapidez a la demanda del mercado mejorando en este tiempo tanto la
presentación del producto como su publicidad, su sabor y capacidad de hacer
espuma así como reduciendo al máximo su contenido en alcohol.
Debido a que la cerveza sin
alcohol se considera como un producto derivado de la cerveza propiamente dicha,
los aspectos legales son comunes para ambos productos y se recogen en el REAL DECRETO 53/1995, de 20 de Enero
(en esta R.T.S. se definen los requisitos industriales e higiénico-sanitarios,
el proceso de elaboración, las prácticas permitidas ó no, las características
de la cerveza y de la malta líquida elaboradas, los aditivos y coadyuvantes
tecnológicos, el envasado, la venta de cerveza de barril, la exportación, los
métodos analíticos, las responsabilidades y el régimen sancionador)
La cerveza sin alcohol es aquella graduación
alcohólica sea menor del 1% en volumen, incluida la tolerancia admitida para la
indicación de tal grado alcohólico volumétrico.
Los métodos de obtención de la cerveza
sin alcohol parten del método general de obtención de la cerveza con
alcohol. Mediante un proceso de desalcoholización, o bien mediante un control
de la fermentación para que la producción de alcohol no sea completa, se
elimina parte del etanol producido en el transcurso de la fermentación alcohólica.
CAMPAÑAS CERVEZA “SIN” LA INCOMPATIBILIDAD DEL ALCOHOL Y LA CONDUCCIÓN
La campaña “La carretera te pide SIN” se ha confirmado como una campaña de referencia para la sociedad y el resto de países de la Unión Europea.
A través de ella Cerveceros de España
lleva desde el año 2000 transmitiendo el mensaje de que alcohol y conducción
son incompatibles, tanto a los conductores y sociedad en general, como a los
alumnos de las autoescuelas, y propone a los consumidores de cerveza la
alternativa sin alcohol.
El mensaje fundamental de la campaña
es “El
alcohol y la conducción son incompatibles. Si vas a conducir bebe cerveza SIN
alcohol”
Asimismo, la campaña se ha ido
adaptando a los cambios sociales: en 2009 se creó una página web
www.lacarreteratepidesin.org, en la que se desarrolló un test de
responsabilidad con el objetivo de ayudar a interiorizar aún más los
conocimientos y mensajes sobre lo importante que es ser responsable al volante
en relación con el consumo de bebidas con contenido alcohólico, dirigido
especialmente a los más jóvenes, y con el que se podían acceder a 25 premios
para contribuir a financiar los gastos ocasionados por el permiso de conducir.

En 2009 la ONG para la prevención de accidentes de tráfico Consejo Europeo de Seguridad en el Transporte (ETSC) concedió a España su reconocimiento anual europeo por su éxito en materia de seguridad vial en el que destacó, junto con las campañas de la DGT, el papel de “La carretera te pide SIN” en este logro.
ALCOHOL Y EMBARAZO NUNCA SON
COMPATIBLES: “UN EMBARAZO SIN”
Esta es la
campaña que tiene
como objetivo
recordar la incompatibilidad del consumo
de alcohol durante el embarazo, y recomienda
a las mujeres embarazadas que si van
a beber cerveza opten por la variedad sin alcohol.
El proyecto
se realiza en colaboración con la Sociedad Española de Ginecología y
Obstetricia (SEGO), que supone la difusión de materiales informativos específicamente
creados para los obstetras y para las mujeres embarazadas o que crean estarlo,
con documentación de interés sobre el consumo de bebidas con contenido alcohólico,
consejos para seguir una dieta completa y equilibrada.
EL VINO SIN ALCOHOL
Es un vino que se
elabora a partir de vino real, es decir no de mostos. Y el proceso debe
garantizar que al final el producto tenga el mismo sabor y aroma que al
principio.
Para la obtención
de esos vinos se parte de la producción de una uva de baja graduación, variedad
verdejo para el blanco de Rueda y tempranillo para los tintos. Por un proceso
de decantación molecular se lleva a cabo una desalcoholización del vino,
separando el alcohol y el 80% de los aromas. Posteriormente, se lleva a cabo la
reconstrucción organoléptica del mismo con la incorporación de los aromas para
lograr que ese producto ofrezca unas sensaciones al paladar y al olfato
similares a las que proporciona el vino.
En la actualidad,
la bodega MATARROMERA , Bodega con
la cual nos hemos puesto en contacto, comercializa este producto sin alcohol
bajo las marcas EminaSin y EminaZero, unas 200.000 botellas, de los 3,5
millones de botellas que vende el grupo. El objetivo para los próximos cinco
años es llegar a los cuatro millones de botellas. La producción se concreta en
vinos blancos, rosados y tintos jóvenes, aunque en tintos hay una oferta de un vino sin tras 12 meses
en barrica.
Fruto de la demanda de un
segmento de la población cada vez más amplio que no puede beber bebidas
alcohólicas, nacen EminaSIN y EminaZero.
A) EminaSIN
es un vino sin alcohol o desalcoholizado logrado a partir de la técnica
denominada Columna de Conos Rotatorios, que conserva las propiedades originales
del vino pero con un 0,5% de alcohol. Disponible en botella y en lata.
1. EminaSIN
Blanco, a partir de uva Verdejo de Rueda.
2. EminaSIN
Rosado, a partir de las variedades de uva Tempranillo y Rueda.
3. EminaSIN
Tinto, a partir de uva Tempranillo de Ribera del Duero.
4. EminaSIN
12 Meses, a partir de Tempranillo y con una crianza de 12 meses en barricas

B) EminaZERO.
Se trata de una bebida elaborada a partir de vino, sin alcohol y sin calorías.
Conserva el color del vino, el 80% de su aroma y sus propiedades beneficiosas
para la salud. Su sabor es algo más dulce y el carbónico lo haces más
refrescante. Disponibles también en botella y lata.

Blanco, elaborado con uva Verdejo de Rueda.
2. EminaZERO
Tinto, procede de uvas Tempranillo del Valle del Duero.
3. EminaZERO
Rosado, resultado de la combinación de uva Verdejo de Rueda y Tempranillo
de Cigales.
4. EminaZERO
Blanco Espumoso, bebida carbonatada a partir de vino espumoso de Verdejo.

variedades de vino están teniendo una muy buena acogida en los países
islámicos, en eventos deportivos...

The methods of obtaining free alcohol beer depart from the general method of obtaining beer with alcohol. By a dealcoholization process, or by controlling the fermentation in order to the uncomplete production of alcohol, part of the ethanol produced during the fermentation is removed.

Using it, beer brewers in Spain are transmitting the message that drinking and driving are incompatible since 2000. Both drivers and society in general, and students of schools buses and proposes consumers of beer business as usual alcohol.
The key message of the campaign is "Alcohol and driving are incompatible. If you're driving drink free alcohol beer".
Also, the campaign has adapted to social changes: in 2009 the web site www.lacarreteratepidesin.org, in which a test of liability was developed in order to help further internalize the knowledge and messages about the importance of being responsible behind the wheel in relation to the consumption of alcoholic beverages, especially aimed at the young ones.

Me llamó mucho la atención lo del vino sin alcohol. Nunca lo había oido!! Lo has probado? Me pica mucho la curiosidad sobre el sabor, el gusto en boca... Este fin de semana fue la carrera Ponle freno a favor de las víctimas de accidentes de tráfico. Fue un éxito rotundo. Yo creo (quiero creer) que la gente está cada vez más concienciada con el tándem alcohol+carretera. Y sobre el embarazo que decirte!!! Me parece vergonzoso que a una mami embarazada se le pueda pasar por la cabeza tomar bebidas alcoholicas, aunque sea esporádico. 9 meses a agua, que es lo más sano!
